Hey beautiful people, food to most people is about so many random things;  health, wealth, love, likes, I could go on all day. For me it’s just the centre of my world, I’m either cooking, eating or thinking about food.February, the month of love they call it. Your dates, your picnics, your braais, your breakfast in bed will all lead you to this thing called food. So here are a few ideas on what you can make.

*Breakfast*
Cereal parfait

You’ll need:
Fresh kiwi fruit (mashed)
Weetbix crushed / muesli
Greek Yogurt
*A champagne or martini glass

Preparation Time: 5minutes

Method:
Assemble the parfait by:
Adding the mashed kiwi fruit to the bottom of the glass
Add the crushed weetbix
Pour the Greek yogurt over the weetbix

…and voila…

*Light Lunch*
Red onion marmalade, Basil and Tomato Sandwich

For the red onion marmalade:
Add 1tablespoon of margarine to a heated saucepan
Add a handful (200g) of thinly sliced red onions and saute them
Add 50g of brown sugar and let it simmer and reduce until the jam is thick and sticky

To grill the aubergine (eggplant):
Slice it up
Add olive oil/sunflower oil to your hot pan
Add your seasoned (with salt and pepper) aubergine
Turn them over

For the sarmie (sandwich)
Get a slice of fresh whole-wheat (healthy choice) bread
Add fresh basil leaves
Add 3 slices of grilled and seasoned aubergine
Add fresh tomato slices
Top it off with the red onion marmalade

And this is what you get:

*Dinner*
Cauliflower Cheese
You will need:
Cauliflower
Cheddar
Creme fraiche
Salt n pepper

Method:

Cut the cauliflower into florettes
Blanch cauliflower in boiling water
Refresh it in ice cold water to stop the cooking process (overcooked cauliflower tastes like boiled cabbage lol)
Grate cheddar into your saucepan and thin it out with your creme fraiche
Heat it until it’s melted
Add your blanched cauliflower florettes
Add salt and pepper
Add chilli flakes

For the chicken remoulade
Chicken breasts (1 per person)
Streaky bacon
Button mushrooms
Salt
Freshly ground black pepper

Method:

Cut your chicken breast and beat it with a meat Tenderizer
Add your cheddar or fetta
Add sauteed mushrooms
Roll into a remoulade
Wrap bacon around the chicken
Grill bake until the bacon is crispy and the chicken is cooked and moist
Cut into slices

Place the chicken over your cauliflower Cheese
Garnish with Thyme
Add a drizzle of olive oil

Aubergine is also called Egg plant or Brinjal and its in season so it’s retailing at less than 60c per unit
