Urban Food Diary with Chef Zinzie : Cheesy Scrambled eggs on Avocado RECIPE OVER HERE

Hey guys we are back with our weekly dosage of foodie madness and fun and as usual we are dishing out food tips, fun food ideas and lots of recipes you can try. I’m Chef Zinzie and this is The Urban Food Diary.

So straight into it, aprons on here is what’s on the menu today.

Breakfast: Cheesy Scrambled eggs on Avocado

Mid day cooler: Pomegrenate Infused Water

Dinner: Steak ‘n’ Mash

Creamy Cheesy Scrambled Eggs Definitely nothing new for anyone that loves eggs, I just added some Cheddar Cheese for that extra gooey texture and to enhance the flavor profile as well as cream cheese to make them lighte.

You’ll need:

2eggs 30g cream cheese

60g cheddar cheese

1 ripe avocado sliced Rocket

1 slice of tomato Butter Salt and pepper

Whisk together the eggs, cream cheese salt and pepper Cook in a pan with some butter and add the cheddar cheese towards the end.

*Chef Tip : try to use a spatula or a wooden spoon for your scrambled eggs instead of a spoon or fork.

Assemble as follows: Seed loaf bread Fresh sliced avocado seasoned with freshly ground salt and pepper The cheesy scrambled egg Some fresh rocket A fresh slice of tomato on the sid.

Mid day cooler: Pomegrenate Infused Water

You’ll need: Fresh pomegrenate rubies Slices of lemon Slices of cucumer Mint Water Infuse these in a water bottle overnight and enjoy the next day.

*Chefs tip: this water can help you eleviate belly fat, eliminate bloating plus hydration in general does wonders to your skin

Dinner:

Steak and Mash

For the marinade whisk together: Steak and Chops spice 50ml Olive oil 50ml Red wine vinegar Freshly ground salt and pepper Oregano Crushed garlic

Marinate for atleast 2hours

For the Mash: Peeled cut and boiled potatoes Butter Cream or milk *(Optional)Cooked and chopped bacon Mash the potatoes in a hot saucepan and add the butter,cream/milk, add the bacon (or fresh herbs if you’re skipping the bacon)

Grill the steak to your liking and let it’s rest for 10mins before serving. Deglaze your grill pan with beef stock and red wine and reduce until it starts to thicken.
