Urban Food Diary with Chef Zinzie : Herb Mash, Fillet Steak, Butternut Puree and Mixed Veggies

Hey guys, welcome to another edition of the Urban Food Diary. So the essence of ‘Simple home cooking’ is taking humble ingredients and making the best of what we can afford as well as what’s available.

On today’s menu:

Brekkie: Bacon and Eggs

Light Lunch: Soya Chunks

Dinner: Herb mash, fillet steak, butternut puree and mixed veggies

Brekkie : Bacon and Eggs
This is simply an Eggs Benedict without the carbs
Hollandaise sauce:
You will need:
-1egg yolk
-1/4 cup melted butter
-1tblsp white wine vinegar

Chopped chives
-whisk your egg yolks and vinegar over a double boiler
-Remove from the heat and add your melted butter.

-Add your chopped chives

Fry your bacon

To poach eggs

-Add water and vinegar or lemon juice to a saucepan and bring this to a gentle simmer
-Gently add your eggs, ensuring your water isn’t boiling
Remove

-Place your bacon on your plate, add your poached eggs drizzle your hollandaise sauce over
*Chefs tip: you could substitute your bacon with panfried bream, sauteed spinach or a grilled chicken breast.

Light Lunch: Soya Chunks

Method:
-Soak and then dry the soya chunks
-Fry them in Cooking Oil then set them aside
-Fry your diced onions and tomatoes
-Season with salt, pepper, ground coriander, chilli flakes and thyme
-Add back the chunk
-Serve on a bed of seasoned and dressed cucumber ribbons

(Optional) serve with Tzatziki to balance out the heat from the chilli flakes.

Dinner: Herb mash, fillet steak, butternut puree and mixed veggies

Chefs tip: The twist on the mash was I added garlic, herbs and butter

For the steak:
-Freshly ground black pepper and salt
-Steak and Chops Spice
-Make a rub with the above and roll the fillet on your rub
-Pan fry your steak for about 4 minutes on each side
Cover it with foil and allow it to rest

Add your boiled potatoes to a saucepan and use a masher or wooden spoon to mash them, add butter, add fresh chopped herbs add crushed garlic, salt and pepper.

Oven Roast a whole butternut for about 1hr30mins, till it’s soft
Cut it in half, and deseed it, scoop it out of the peels and mash.

Add butter, salt and pepper.

Peel and cut veggies you have available then blanch them in boiling water and toss them in olive oil, add seasoning.

Slice the steak and serve it with a source of your choice.
